Meet up with the guy powering Odette — a person of three restaurants in Singapore with a few Michelin stars

The secrets of Odette’s 3-Michelin-star success

Odette is named immediately after a revered matriach in Chef Julien Royer’s existence: his grandmother.

“She is definitely a person pretty vital to me, and the human being that truly showed me how significantly passion, satisfaction, joy and emotion you can give to people via food items,” he informed CNBC.

Initially from central France, Royer rose to the major of the culinary earth in 2019, when Odette was awarded three Michelin stars and named the greatest restaurant in Asia.

The restaurant — housed in Singapore’s sprawling Nationwide Gallery — serves French-Asian cuisine in an ethereal eating room adorned with pink terrazzo, grey velvet and liberal touches of nickel and marble.

The cafe, reported Royer, is intended to be a respite from the outdoors world.

“I want folks to come in, to sense cozy in the atmosphere that we have made. I want people today to have a fantastic time and hopefully forget about about their day by day anxieties of daily life.”
